Before the question, though, to those of you who celebrate it:
Happy Independence Day! 🙂
Have a wonderful, safe weekend, and grill well!
Speaking of which – the question:
Anybody got any good grill recipes and/or techniques for grilling vegetables?! I need some ideas for this weekend! 🙂
EDITED to add: Found a great recipe for Grilled Garlic and Basil Eggplant!

Ok, grab your favorite veggie…anything, onions, bell peppers, portabello mushrooms, or any of the thousand zuchinni that are growing in your garden.
Cut them into large grillable slices. Place them in a ziploc bag and pour Newman’s own Balsamic vinagrette over them. Let them marinate for at least 1/2 hour or longer. Then grill them! So Very Yummy!!!
p.s. the above comment/recipe was from me, Terri

Yum!
Ooh, Terri – thanks!! That sounds really simple, and yummy! I will be trying that this week! 🙂
Hope you guys had a great holiday weekend!
favorite grilling food
Ok – I know its now been weeks since you were looking, andyou probably already know this one, but you can’t beat the ease and taste of grilled corn on the cob.
You can husk, de-silk, or (my favorite) simply take the in the husk corn and put it on a grill turning every 3-5 minutes until the husks are browned.
mmmm.
Re: favorite grilling food
Ooh, you know, I’ve only done that a couple of times, and I always scorch the husk – but I keep putting it on while the grill is at its hottest – I think I need to do it a little later!
You’re right though – SO GOOD!
